Been away too long

Trying to get my act together again...not sure how or when that will happen but I AM trying! Starting my Christmas shopping and cards this week and I'm also getting started with the Thanksgiving lists. Before I tackle that I'd best get my laundry switched and the groceries out of the car. Get up, Lazybones!!

Pumpkin Soup

I am on a liquid diet for the week and made a batch of this on Wednesday that I am still enjoying.

1 1/2 cups plain pumpkin puree
3 cups chicken broth
3/4 cup skim milk, divided
1 tbsp flour
1/2 tsp ground ginger
1/4 tsp freshly grated nutmeg
2 egg yolks

Mix the pumpkin and broth to a simmer. Whisk the flour and spices into 1/4 cup of milk and add to the simmering soup. Cook over VERY low heat for 20 minutes. Mix the remainder of the milk with the egg yolks and add to the simmering soup. Cook 5 minutes and serve.
